DEVILED EGGS

It’s not a party without deviled eggs!


Using the superior ingredients of Organic Valley and Niman Ranch create this easy, retro favorite. Whether you’re hosting a party, heading to a picnic or need a tasty snack, this deviled eggs recipe is a winner.

 

MAKES 12 EGGS

INGREDIENTS

  • 6 Organic Valley Eggs
  • 2 Niman Ranch Chorizo Sausages, chopped 
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt, to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon snipped fresh chives
  • 3 tablespoons mayonnaise
  • Whole fresh chives, for garnish

METHOD

  1. Rinse eggs with warm water, and place in a small saucepan. Cover with cold water, place the pan over medium-high heat and bring to a boil. Turn off heat, cover and let sit for 10-12 minutes. Drain, rinse under cold water and peel. Cool in the refrigerator, loosely covered, for 15 minutes.
  2. Bake chopped chorizo on a sheet pan at 400 degrees or fry in a pan until crispy. Reserve the rendered fat, it can be used in the filling for an extra punch of flavour. 
  3. Halve eggs lengthwise, and carefully scoop out yolks. Place yolks in a bowl, and mash with a fork. Add mustard, salt, lemon juice, pepper and snipped chives. Stir in mayonnaise, and optionally rendered fat from chorizo.
  4. Fill each egg white with about 1 1/2 teaspoons of the egg-yolk mixture and sprinkle with chopped chorizo. Arrange in a spoke design on a platter; garnish with whole chives.


 

 

Garnish the  deviled eggs with paprika and chives or crisp Niman Ranch Chorizo.

NOTE: You can slice this fully cooked sausage in any direction you like, though I like when they curl up when baked. Bake on a sheet pan at 400 degrees or fry in a pan until crispy. Reserve the rendered fat, it can be used in the filling for an extra punch of flavor. 

Serve right away or keep them chilled in the fridge until ready to serve.
